The Dough
Combine equal parts of regular and whole-wheat flour, butter, milk, honey, and eggs to create the perfect dough. Form the mixture into small balls, sprinkle with oats or wheat germ, and let them rise. Once baked, pull apart these soft, slightly sweet rolls and serve warm.
Ingredients
For the dough:
- 2 cups all-purpose flour
- 2 cups whole-wheat flour
- 1 packet active dry yeast (2 1/4 teaspoons)
- 2 teaspoons fine salt
- 8 tablespoons unsalted butter (1 stick)
- 1 1/2 cups whole milk
- 1/3 cup honey
- 2 large eggs, lightly beaten
- Vegetable oil for coating the bowl
To assemble:
- 1 tablespoon unsalted butter
- 1 teaspoon water
- 1 large egg or 1 tablespoon honey
- 2 tablespoons rolled oats (not instant) or 2 teaspoons toasted wheat germ
Instructions
Step 1: Prepare the Dough
Lightly coat a large bowl with vegetable oil and set it aside. Whisk together the flours, yeast, and salt in the bowl of a stand mixer. Melt the butter in a medium saucepan over low heat, adding the milk and honey until the mixture reaches 105°F to 115°F on an instant-read thermometer.
Step 2: Mix and Knead
Pour the milk mixture over the flour mixture and add the eggs. Mix with the hook attachment on medium-low speed until just combined, then increase the speed to medium-high and knead until the dough is smooth and elastic.
Step 3: Let it Rise
Scrape the dough into the prepared bowl, cover it tightly with plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour. If not baking the dough until the next day, place it in the refrigerator to rise overnight.
Step 4: Assemble and Bake
Coat the bottom and sides of a 13-by-9-inch glass baking dish with butter. Divide the dough into 20 equal pieces, roll each into a tight ball, and arrange them in the prepared baking dish. Cover the dish with plastic wrap and let the dough balls rise until doubled in size, about 1 hour. Heat the oven to 350°F, brush the rolls with the egg or honey mixture, and sprinkle with oats or wheat germ. Bake until golden brown, rotating the dish halfway through the baking time, about 22 to 25 minutes total. Let the rolls cool for at least 10 minutes before serving.
