Preparation

Allow your beef roast to come to room temperature. Rinse it under cool water, pat it dry with towels, and lightly coat it with olive oil and paprika.

Searing the Beef

Preheat your oven to 350°F. Heat a large skillet to medium-high heat. Brown the quartered onions on each flat side, then remove them from the skillet and place them in a roasting pan. Quickly brown the garlic and add it to the pan with the onions. Next, sear the beef roast until a crust forms, flipping it to brown both sides. Place the roast in the center of the roasting pan, surrounded by the onions and garlic.

Adding the Wine and Aromatics

Deglaze the skillet with Shiraz wine, scraping up all the dark brown bits. Pour the wine over the roast, then sprinkle with rosemary and grind some fresh black pepper on top. Fill the roasting pan with water to about half the height of the beef, but don’t cover the roast. Add some fresh mushrooms and a bouquet garni to the pan.

The Final Touches

Cover the roasting pan and place it in the oven. Cook for 3 to 3 1/2 hours. Remove the roast and onions from the pan, and pour the juices into a medium saucepan. Thicken the gravy over medium heat, then season with salt to taste. Serve the roast with the rich, flavorful gravy, accompanied by your favorite mashed potato or rice recipe.
