  • 24 ounces small potatoes (about 24 potatoes), scrubbed
  • 1 tablespoon olive oil
  • 1 tablespoon sea salt
  • 1 ½ cups sour cream
  • 1 bunch chives, minced

Preheat your oven to 350°F. Prick each potato once with a fork, then toss with olive oil and half the salt. Spread the potatoes in a single layer on a rimmed baking sheet. Bake for about 40 minutes, or until done. Let them cool for 10 minutes.
