Sautéing the Onion and Rice
In a large pot or Dutch oven, heat 1/4 cup of olive oil over medium heat. Add a finely chopped medium yellow onion and cook until translucent, about 5 minutes. Then, add 2 cups of Arborio or Carnaroli rice and cook, stirring constantly, until the kernels start to crackle, about 1-2 minutes.
Adding the Wine and Broth
Stir in 1 cup of dry white wine and let simmer until the liquid has been absorbed, about 2-4 minutes. Then, add a ladleful of the simmering broth to the rice and stir constantly until the liquid has been absorbed. Continue adding the broth, stirring and letting it absorb, until the rice is al dente, about 20-30 minutes.
Finishing Touches
When the rice is cooked, remove from heat and stir in 1 1/4 cups of finely chopped fresh herbs, 1/4 cup of grated Parmesan cheese, and 1 1/2 teaspoons of freshly squeezed lemon juice. Taste and season with salt, pepper, Parmesan, and lemon juice as needed. Just before serving, loosen the risotto to the desired consistency with a little more broth or hot water. Serve immediately, drizzling each serving with olive oil.
