Get Ready for a Flavorful Feast
In just 20 minutes, you can create a mouth-watering dish that’s sure to impress your family and friends. This savory scallop recipe yields two servings and requires minimal effort, making it an ideal option for a busy day.
Gather Your Ingredients
- 1 lb. scallops (smaller bay scallops work too)
- ½ lb. snow peas
- ½ cup white wine
- 3 tbs. nam pla (Thai fish sauce) or soy sauce as a substitute
- 3 garlic cloves, chopped
- 2 tbs. fresh ginger, chopped
- 4 tbs. butter
- 1 tbs. lime juice
- Freshly ground pepper
Prepare Your Ingredients
Before diving into the cooking process, make sure to start cooking your rice. You’ll want it ready when the scallops are done. If using large scallops, slice them into ¼-inch thick strips. For smaller bay scallops, no slicing is needed. Rinse and drain the snow peas, removing the strings and cutting them into 1-inch lengths.
Sautéing the Aromatics
Heat a small saucepan or skillet with a little butter. Add the chopped ginger and sauté for 30 seconds, followed by the garlic for another 30 seconds. Then, pour in the white wine and fish sauce, reducing the mixture by half while stirring frequently. Keep this hot and stirred to prevent burning.
Cooking the Scallops
In a large skillet, melt the remaining butter over moderately high heat. Add the scallops and a pinch of pepper to taste. Once the scallops are opaque, about 2 minutes, add the snow peas and stir-fry until they change color. Don’t overcook the scallops – they should still retain some translucency.
Finishing Touches
Add the prepared sauce and lime juice to the skillet, stirring everything together for a few seconds until well-mixed. Your savory scallop dish is now ready to be devoured! Serve with a side of steaming hot rice and enjoy the flavors of this quick and easy recipe.
