A Burrito Born from Experimentation

One fateful evening, I found myself craving a burrito. Instead of heading out to a restaurant, I decided to take matters into my own hands and create one at home. A trip to the grocery store later, and I was ready to experiment with different ingredients to craft the perfect burrito.

Ingredients

  • 8 Flour Tortillas
  • 2 Chicken Breasts
  • 2 Yellow Onions
  • 1 Red Pepper & 1 Yellow Pepper
  • 2 Poblano Peppers
  • 1 Can of Baked Beans
  • Half to Full Can of Kettle Corn
  • Mexican Cheese Blend from a Grocery Store

Preparing the Filling

To start, slice the Poblano, red, and yellow peppers into thin strips. The thinner they are, the faster they’ll cook. Next, cut the yellow onions into strips and the chicken breasts into slightly thicker strips. Don’t worry too much about the chicken strip thickness, as they’ll be cooking alongside the onions, which need to caramelize.

Cooking the Filling

Combine all the ingredients in a large pan, drizzling olive oil over them to facilitate onion caramelization. Stir everything together, ensuring the chicken is cooked through. After 15-30 minutes, turn off the heat (our little secret: the onions might not be fully caramelized, but that’s okay!).

Assembling the Burrito
