As the sun shines bright, our taste buds crave something light, fruity, and utterly refreshing. This delightful summer beverage is just the ticket! With a hint of spice and a burst of flavor, it’s the perfect drink to quench your thirst on a hot day.

The Magic Ingredients

  • 4 cups of fresh berries or fruit (strawberries and rhubarb make a fantastic combo)
  • 1 piece of fresh 3-inch ginger, sliced
  • 2 cups of water
  • 1 cup of sugar
  • 4 sprigs of fresh mint
  • Club soda
  • Pomegranate liqueur

Let’s Get Brewing!

Bring the fruit, ginger, and water to a gentle simmer in a large pot. Allow the mixture to cook until the fruit is tender, about 10-15 minutes. Let it cool slightly before straining it through a cheesecloth-lined sieve into a large saucepan, pressing on the fruit to extract all the juices. Discard the fruit and add sugar to taste, adjusting the sweetness to your liking.

Reducing to Perfection

Put the juice mixture back on the stove and bring it to a simmer until the sugar dissolves. Add the fresh mint and continue cooking until the mixture reduces to a light syrup, about 15 minutes. Let it cool completely, then discard the mint.

Transfer the syrup to sterilized bottles or airtight containers. Cover, and refrigerate for up to 3 months.
