Ingredients

For the Cake:

  • 1 cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ⅛ teaspoon salt
  • 1 medium ripe banana (about 3 ounces)
  • ⅓ cup unsweetened applesauce
  • ¼ cup whole milk
  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon almond extract

For the Frosting:

  • 1 cup frozen blueberries
  • ¼ cup water
  • 1 cup heavy whipping cream

Instructions

  1. Preheat oven to 350°F. Butter two 4-inch spring form pans and dust with whole wheat flour.
  2. Heat frozen blueberries and water in a saucepan over medium-low heat until they soften and burst. Blend until smooth and set aside to cool.
