Ingredients
For the Cake:
- 1 cup whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ⅛ teaspoon salt
- 1 medium ripe banana (about 3 ounces)
- ⅓ cup unsweetened applesauce
- ¼ cup whole milk
- ¼ cup pure maple syrup
- 1 large egg
- 1 teaspoon almond extract
For the Frosting:
- 1 cup frozen blueberries
- ¼ cup water
- 1 cup heavy whipping cream
Instructions
- Preheat oven to 350°F. Butter two 4-inch spring form pans and dust with whole wheat flour.
- Heat frozen blueberries and water in a saucepan over medium-low heat until they soften and burst. Blend until smooth and set aside to cool.
- Whisk together dry ingredients in a large bowl. Set aside.
