The Waffle Recipe
Yielding about 6 Belgian waffles, this easy recipe requires 55 minutes of preparation time, plus 1 hour of rising time. The ingredients include:
- Yeast mixture: whole milk, granulated sugar, and active dry yeast
- Waffles: all-purpose flour, semolina flour, cornstarch, kosher salt, baking powder, eggs, granulated sugar, unsalted butter, whole milk, half-and-half, and vanilla extract
- Cinnamon sugar: granulated sugar and ground cinnamon
- Chocolate sauce: natural unsweetened cocoa powder, granulated sugar, water, freshly made espresso, chili powder, ground cinnamon, vanilla extract, and kosher salt
- Coconut crema: thick coconut cream, granulated sugar, vanilla extract, and Mexican crema or crème fraîche
Preparing the Waffles
To begin, heat the oven to 250°F and set a wire rack on a baking sheet inside. Activate the yeast mixture by stirring it together and setting it aside for 15 minutes. In a large mixing bowl, combine the dry ingredients, and in a separate bowl, whisk together the wet ingredients. Make a well in the dry ingredients and pour in the wet mixture, whisking until a smooth batter forms. Let the mixture rise at room temperature for at least 1 hour.
Cooking the Waffles
Heat the waffle iron to medium and brush it with vegetable oil. Fill the iron with batter, close the lid, and cook until the waffle is golden brown. Transfer the waffle to the wire rack in the oven to keep warm. Repeat with the remaining batter.
Assembling the Waffles
