Savoring the Flavor of Homemade Gnocchi
When it comes to cooking potato gnocchi, simplicity is key. By focusing on the core ingredients, you can create a dish that showcases the light, rich texture of these potato-based pasta pillows.
Starting with the Perfect Potatoes
To begin, you’ll need 4 ½ pounds of russet potatoes, scrubbed clean and ready for baking. Preheat your oven to 425°F and place the potatoes on a baking sheet. Bake for 45 minutes to an hour, or until a knife can easily pierce the potatoes.
Transforming Potatoes into Gnocchi
Once the potatoes are cooked, peel them while still warm and pass them through a ricer or food mill. Mix in 2 teaspoons of salt, 2 eggs, and enough flour to create a dough that holds its shape but remains pliable. Roll out the dough into logs the width of your thumb and cut into 1-inch lengths. Use a fork or grooved board to create the traditional gnocchi shape.
Cooking the Gnocchi to Perfection
Bring a large pot of lightly salted water to a boil and add the gnocchi. Cook for 3 minutes, or until they rise to the surface and are no longer doughy in the center. Be careful not to overcook, as this can cause the gnocchi to fall apart.
Infusing Flavor with Sage Butter
While the gnocchi cook, melt 8 ounces of butter in a large sauté pan and add a bushel of picked sage leaves. Allow the sage to wilt, but avoid browning the butter. Once the gnocchi are cooked, drain them well and toss them in the sage butter. Season with salt, pepper, and a sprinkle of grated Parmesan cheese.
