  • 1 large turnip (10 ounces), peeled and quartered
  • 1/2 medium yellow onion (5 ounces), cut into quarters
  • 2 large eggs, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh thyme leaves
  • 1 1/2 teaspoons kosher salt, plus more as needed

  • 6 ounces duck fat or 3/4 cup vegetable oil, plus more as needed

Instructions
